birthday cake blondies

today is my wonderful husband’s birthday!
(it’s a pretty big one too!)
in honor of this most momentous occasion, i baked birthday cake blondies.
what is this magical creation you ask?
it’s like if a cookie and a brownie had a baby and that baby played with sprinkles.
heavenly/divine/perfect…insert word of choice.

because i’m so darn nice i’ve decided to share the recipe i used.
i love baking so i had to experiment a little and am totally happy with the result.

birthday cake blondies
blondies 1
(i forgot to put out the other egg and the butter when i took this pic…oops!)
1 c all purpose flour
1 t baking powder
1/4 t baking soda
1 t salt
2/3 c butter–melted
2 c brown sugar–packed
2 eggs
2 T vanilla extract

in a small bowl whisk together the flour, baking powder, baking soda and salt. set aside.
melt the butter. pour melted butter into a large mixing bowl. add the brown sugar. mix together then let cool for a few minutes.
beat the eggs then add them to the sugar/butter mix. add the vanilla. beat well.
blondies 2
slowly, add the flour mix to the brown sugar mix.
(this can also be said as “add the dry mix to the wet mix”)
blondies 3
add flour mix until completely combined.
blondies 4
add sprinkles!
blondies 5 blondies 6
spread mix into a greased 9×13 pan.
blondies 7
bake at 350 for 30-35 minutes.
blondies 8
um, yum. it’s possible i’m drooling right now. or i may not be. you’ll never know!
i added white chocolate chips to the top of mine hoping they’d melt.
(they didn’t.)
blondies 9
to jazz them up even more i cut them into bit size pieces and then topped them with some chocolate fudge frosting and even more sprinkles!

yum yum yum.
best way to celebrate a birthday or any occasion is with cake!
happy birthday my dearest j!
i’m off to bring these to his work. i’m hoping his shop won’t devour them all before i can grab one!
