oatmeal butterscotch & white chocolate chip cookies

today i’m sharing a super easy recipe for insanely tasty cookies.
j’s not a big butterscotch guy but these babies even got his seal of approval!
oatmeal butterscotch cookies and j(that was his third one!!!)
go grab a recipe card because i guarantee this is one you’ll want to keep!

OATMEAL BUTTERSCOTCH & WHITE CHOCOLATE CHIP COOKIES
ingredients:
-1 large egg
-1 stick butter, at room temp
-1/2 c light brown sugar, packed
-1/4 c sugar
-1 T vanilla extract
-1 1/2 c old fashioned rolled oats
-3/4 c all-purpose flour
-2 T cinnamon
-1 t baking powder
-1/2 c butterscotch chips
-1/2 c white chocolate chips

instructions:
gather ingredients.
oatmeal butterscotch cookies 2at this point it’s important to put on a pretty vintage apron if you have one!

-add egg, butter, sugars and vanilla to a large bowl. beat on medium high with stand mixer until mix is well combined, light and fluffy. this takes about four minutes.

-scrape sides of bowl then add oats, flour, cinnamon and baking powder. beat just to mix the dry into the wet. about a minute or so.

-add in the chips and beat just until the entire mix is combined.

oatmeal butterscotch cookies 8-take a large dinner spoon and spoon cookie dough onto a plate. flatten slightly.

-cover the plate and place in the fridge for at least 3 hours.

oatmeal butterscotch cookies 143+ hours later…
-preheat the oven to 350°F.
-place the cookies on a greased 9×13 baking sheet.
oatmeal butterscotch cookies 10-bake for 9-10 minutes or until cookie is just set.
-let cool on baking sheet for five minutes or so before transferring onto a cooling rack.

3+ hours later…
